Brocolli and cheese
Taxes, Frostbite and the Flat Tire could be the name of a movie right?  Before we get into that I wanted to share my big WIN this week.  

THE WIN:

This is a broccoli & cheese dish I made from scratch!   It was super easy too!  

  • 4 heads of Fresh Organic Broccoli cut in 2 " pieces
  • Flour
  • Cheese (Organic)  Sharp Cheddar
  • Milk
  • Salt
  • Pepper
  • Onions

I paired this with a Flat Iron Steak that I squeezed Lime Juice on and seasoned with salt and pepper, it was yummy!!!

 THE UGLY:

When I weighed in today I was up, and up more than I wanted so far up I'm embarrased to share šŸ™

However today started the 90 day challenge.  So now I'm going to reach my first goal of 40lbs down in the next 90 days!  So please wish me luck and if you can pray for me!   I have committed to joining a team weight loss group that is every Monday, Wednesday, and Friday at 6 a.m.  so please pray I can get my butt out of bed!  LOL!  It will help me reach my cardio goals.  

Now I know you can't wait to hear what the Taxes, Frostbite and Flat Tire are all about.   This past week I was crunching numbers and trying to get everything ready for the accountant Friday on the 7th.  Everything was going well until Friday morning.  That's when my yongest son who is 15 years old decided to finish shovel the snow in minus 20 degree weather WITHOUT GLOVES!   As a result he received 1st degree frostbite! 

After I got home with my son from the ER (where we got the 1st degree Frostbite diagnosis) my hubby and I left for the accountant in my little red car.   As I was driving we got a flat tire.   Luckily my oldest son was still home with his friends and we were able to have him drive our car and his friends drove his car to meet us.  After dropping off the car the boys left to go to basketball, Jeff went to the accountant and I stayed with the car for the tire repair and enjoyed taquitos and freshly made at the table salsa at Miguels Cantina (this princess is too wimpy to tough it out in the cold car!).

When the tire repair guy got there he said it couldn't be repaired and had to be towed (this car doesn't have a spare) and their company doesnt tow.   So, I had to call for a tow and the said it would take 3 hours for them to get there.   We had to volunteer at the JV Basketball game so my hubby picked me up on the way back from the accountant and took us to the Junior Varsity Basketball game.  After that we watched the Varsity team play and the day ended with a win and the tow truck had towed the car to the dealership, that was perfect ending to the day!   

Today on the way to the gym I encountered yet a another flat tire on my other car!   This time I laughed (better than crying) and I called the road service.  This time they could put the spare tire on for me.  Now I'm happy to report all tires are replaced and I'm confident this week will be better.  Although I missed my pilates workout I was able to meet with the dietitian and come up with a game plan for food to meet my goals to reach my desired weight!
